Leek and Potato Soup

2lb potatoes
1 – 2 carrots
2 large leeks

1oz butter – for cooking the vegetables
1 ½ pints chicken stock
1 bay leaf
¼ pint milk
Salt and pepper
Sprinkle of mace


Chop the vegetables.

  Melt the butter.

Add the chopped vegetables and cook for about 10 minutes.

  Add the chicken stock (enough to cover the vegetables), the bay leaf, the salt and pepper and the sprinkle of mace.

Cook until all the vegetables are soft.  Take out the bay leaf.  
Blend until all the vegetables are smooth.  
If the soup is too thick for your liking, add more chicken stock and cook for a few minutes longer.    
Add the milk and cook for a further 5 minutes. 

To freeze:
Do not add the milk.  When re-heating, add the milk and cook through.

Food For A Friend

My friend just had twin girls (Congratulations Nicole!!) and I wanted to be able to help her in some way.  I decided that meals and snacks would be welcome and set to making her the following:

Cottage Pie
Banana Muffins
Chocolate Chip Cookies
Mini Apple Pies
Mac and Cheese
Chicken Pot Pie
Fruit Salad

I wanted her to be able to have a few meals that were easy to heat in the oven quickly and to have snacks for herself and for any visitors.

My granola recipe:

2 cups quick cook oatmeal
1 heaped cup mixed nuts (almonds, walnuts)
¼ cup mixed seeds (poppy)
¾ cup unsweetened shredded coconut
1 teaspoon ground cinnamon
1 ½ cups dried fruit (raisins, cranberries)
5 tablespoons maple syrup or honey
5 tablespoons olive oil

1.  Preheat oven to 350F (175C).
2.  Put your dry granola ingredients, including the coconut and cinnamon but not the dried fruit, on a sheet pan.
3.  Stir well and smooth out.
4.  Drizzle with the maple syrup / honey and olive oil and stir again.
5.  Place the pan in the preheated oven for 20 – 25 minutes.
6.  Every 5 minutes or so, take the granola out and stir it, then smooth it down with a wooden spoon and put it back into the oven.
7.   When the granola is nice and golden, remove it from the oven, mix in the dried fruit and let cool.
8.  Serve with milk or yoghurt.  Will keep in an air tight container for approximately 2 weeks.
